Thompson Seville ready to welcome its first guests

The opening of Thompson Seville is just around the corner. The new luxury lifestyle hotel in the heart of the Andalusian capital is now accepting reservations for stays from 29 September 2026 onwards.
Located at Plaza de la Concordia in Seville’s historic centre, the hotel is set within the former La Gavidia police headquarters and features 101 rooms, including 22 suites. Designed by Ramón Montserrat Ballesté and closely associated with Seville’s Modern Movement, the landmark building has been transformed into a hotel by design studio Proyecto Singular.
Contemporary design is combined with references to Andalusian heritage, while several suites come with private terraces overlooking the city.
One of the highlights is the rooftop, home to an outdoor swimming pool, Pool Bar and fitness centre with views across Seville.
Food and drink play an important role at the hotel. Casa Mayo brings more than 60 years of culinary tradition from Grupo Manolo Mayo to Thompson Seville, with a menu centred around Andalusian cuisine, seasonal produce and locally sourced ingredients.
Casa Mayo also marks a new chapter for the group’s existing Mayo Sevilla restaurant, which closed its former location on Calle Reyes Católicos this summer before moving to Thompson Seville under its new name.
The restaurant is spread across three distinct spaces: the main dining room, a light-filled patio and an outdoor terrace. The Lobby Bar serves as an all-day social space, while the rooftop Pool Bar combines panoramic views with cocktails, a light menu and a Mediterranean atmosphere.
Thompson Hotels was founded in New York City in 2001 and is today part of Hyatt’s lifestyle portfolio. Known for combining contemporary design, food and drink, and the culture of its surroundings, the brand has grown to destinations across North America, Latin America, Europe and Asia.
Thompson Seville joins the brand’s growing European presence, which already includes Thompson Madrid and Thompson Rome.
